I have to confess I'm a picky eater. I have a pretty short list of things that I eat out of all of the billions of delicacies available for man to devour. I even like my food separated on my plate - or better yet one thing on a plate and everything else in a bowl or on a saucer - so nothing intermingles.
From my family's bakery, Cupcakes Bakery & Deli in Kennewick, Wash., I've basically only eaten chocolate cupcakes with cream cheese frosting since 2009. Chocolate. It's what I do, it's who I am. But, in October I ate some vanilla wedding cake because I was craving massive amounts of sugar one evening, and vanilla cake was all that was available.
Let me tell you. It was phenomenal! No lie. When I eat vanilla cake - and, seriously, I try not to - I have to have Haagen Dasz vanilla ice cream at the ready. And, I need enough ice cream to match every bite of cake. O_O But, it was so moist and delicious I didn't need ice cream and I ate so much of it, I laid flat on my back in front of the fire place to digest and recover from sugar coma.
Since then, through coercion, I've tried Strawberry Cheesecake and, willingly, Blueberry Cheesecake. And, now, these Pistachio cupcakes are beckoning me with a force I may not be able to withstand.
Oh, oh, Pistachio! I wish you'd stop calling my name.

Those cupcakes look too cute to eat!!! One of my father's favorite ice creams was pistachio and I am sure he would love these cupcakes. I have to make my way to Washington, I want a sample of each.
